Pad Thai

Pad Thai is a popular Thai dish that consists of stir-fried noodles, typically made from rice noodles, and a variety of ingredients like shrimp, chicken, tofu, egg, peanuts, bean sprouts, and scallions. It is a flavorful and aromatic dish that is both sweet and sour, and has a slightly spicy taste.

 

The dish typically starts with soaking the rice noodles until they are soft and pliable. Then the noodles are stir-fried with eggs, protein, and vegetables in a wok or frying pan. The Pad Thai sauce is made from tamarind paste, fish sauce, palm sugar, and lime juice, which gives the dish its signature sweet and sour flavor.

 

Once the sauce and noodles are combined, they are topped with peanuts, bean sprouts, and scallions, which adds a crunch and freshness to the dish. Sometimes a wedge of lime is also added to give the dish an extra burst of tanginess.

 

Pad Thai is a versatile dish that can be customized to personal preference by adding or removing ingredients or adjusting the spiciness level. It is a delicious and satisfying meal that can be enjoyed any time of the day, whether it's for lunch, dinner, or even as a late-night snack.

 





Ingredients:

8 oz noodles (pad thai or other type)

2 tbsp sesame oil

2 eggs, lightly beaten

1 diced chicken breast

1/4 cup shallots

3/4 cup pad thai sauce (see recipe below)

1 cup bean sprouts

1/2 cup crushed peanuts

1/4 cup green onions

1/4 cup cilantro

Pad Thai Sauce:

1/8 cup fish sauce

1/8 cup rice vinegar

1/8 cup soy sauce

1/8 cup brown sugar

1/8 cup lime juice

1/8 cup Sriracha sauce

Directions:

  1. Cook noodles according to package instructions. Toss with 1 tbsp sesame oil and set aside.
  2. Pour 1/2 tbsp of sesame oil into a large pot and add the lightly beaten eggs. When the eggs are cooked, set them aside.
  3. Add another 1/2 tbsp sesame oil to the pot and add the diced chicken breast. Cook until the chicken is fully cooked, then set it aside.
  4. Add the shallots to the pot and cook until lightly browned and fragrant.
  5. Add the cooked noodles, eggs, and chicken back into the pot.
  6. Pour the pad thai sauce into the pot and stir until well blended.
  7. Top with bean sprouts, crushed peanuts, green onions, and cilantro.
  8. Garnish with extra peanuts, green onions, and cilantro if desired.

To make the Pad Thai sauce:

In a small bowl, whisk together fish sauce, rice vinegar, soy sauce, brown sugar, lime juice, and Sriracha sauce until well combined.
