Ingredients:
6 bone-in, skin-on chicken thighs
1 tablespoon of paprika
Salt and pepper to taste
3 tablespoons of unsalted butter
3 cloves of garlic, minced
1/2 cup of heavy cream
1/4 cup of grated Parmesan cheese
1 lemon, juiced
2 cups of baby spinach
Fresh thyme (optional)
Instructions:
- Preheat your oven to 400°F / 200°C.
- Season the chicken thighs with salt, pepper, and paprika on both sides.
- In a large oven-proof skillet, melt 2 tablespoons of butter over medium-high heat. Add the chicken thighs, skin-side down, and sear for 3-4 minutes on each side until golden brown. Remove the chicken from the skillet and set it aside.
- In the same skillet, melt 1 tablespoon of butter over medium heat. Add minced garlic and stir until fragrant, about 30 seconds.
- Pour in chicken broth, heavy cream, Parmesan cheese, lemon juice, and fresh thyme (if using). Stir well and bring the mixture to a boil.
- Reduce the heat to low and add the baby spinach to the skillet. Stir until the spinach has wilted and the sauce has thickened.
- Return the chicken thighs to the skillet, skin-side up, and spoon some of the sauce over the chicken.
- Bake in the preheated oven for 25 minutes or until the chicken is fully cooked.
- Once done, remove the skillet from the oven and let it rest for 5 minutes.
