Ingredients:

6 bone-in, skin-on chicken thighs

1 tablespoon of paprika

Salt and pepper to taste

3 tablespoons of unsalted butter

3 cloves of garlic, minced

1/2 cup of heavy cream

1/4 cup of grated Parmesan cheese

1 lemon, juiced

2 cups of baby spinach

Fresh thyme (optional)


Instructions:

  1. Preheat your oven to 400°F / 200°C.
  2. Season the chicken thighs with salt, pepper, and paprika on both sides.
  3. In a large oven-proof skillet, melt 2 tablespoons of butter over medium-high heat. Add the chicken thighs, skin-side down, and sear for 3-4 minutes on each side until golden brown. Remove the chicken from the skillet and set it aside.
  4. In the same skillet, melt 1 tablespoon of butter over medium heat. Add minced garlic and stir until fragrant, about 30 seconds.
  5. Pour in chicken broth, heavy cream, Parmesan cheese, lemon juice, and fresh thyme (if using). Stir well and bring the mixture to a boil.
  6. Reduce the heat to low and add the baby spinach to the skillet. Stir until the spinach has wilted and the sauce has thickened.
  7. Return the chicken thighs to the skillet, skin-side up, and spoon some of the sauce over the chicken.
  8. Bake in the preheated oven for 25 minutes or until the chicken is fully cooked.
  9. Once done, remove the skillet from the oven and let it rest for 5 minutes.
  10. Serve immediately, garnished with additional fresh thyme and lemon wedges, if desired.
