Chicken Teriyaki Meatballs

Ingredients:
1 pound ground chicken
1/2 cup panko breadcrumbs
1/4 cup finely chopped onion
1/4 cup finely chopped green onions
1/4 cup chopped cilantro
1 tablespoon grated ginger
1 tablespoon minced garlic
1 egg, beaten
Salt and pepper, to taste
1 tablespoon vegetable oil
1/2 cup teriyaki sauce
1 tablespoon cornstarch
1/4 cup water
Sesame seeds and sliced green onions, for garnish (optional)
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the ground chicken, panko breadcrumbs, chopped onions, green onions, cilantro, grated ginger, minced garlic, beaten egg, salt, and pepper. Mix everything together until well combined.
- Roll the mixture into 1-2 inch meatballs and place them onto a lightly oiled baking sheet.
- Bake the meatballs for 20-25 minutes, or until fully cooked through and lightly browned.
- In a small saucepan, whisk together the teriyaki sauce, cornstarch, and water. Bring the mixture to a boil over medium-high heat, then reduce the heat and simmer for 2-3 minutes until the sauce thickens.
- Toss the meatballs in the teriyaki sauce until fully coated.
- Garnish with sesame seeds and sliced green onions (optional).
